What was your gift for Valentine’s Day?

I got a dozen red roses and a big kiss. It was so nice for my husband to leave early this morning – without my knowing – to purchase them. In that way, I get to enjoy them for the whole day and beyond. What a sweetie!

What did I give him? A restaurant-made, lemon-meringue pie and a bacon baking dish. Our microwave dish broke and since my husband cooks a lot of bacon I thought I would replace this. However, when I called the woman to order a similar microwave dish, she steered me away from that since it only would cook four pieces of bacon at a time. She suggested I purchase a large baking pan, saying once you cook bacon in the oven you’ll never go back to doing it the other way. I took her advice and ordered one. My thinking was you could bake all the bacon at one time and that would be awesome. She recommended we bake it at 375 to 400 degrees for 25 minutes. Well, we will see how this turns out.

  1. For Valentine’s Day, I got snow drifts so high in the road that I couldn’t drive the kids to the bus stop, so my kiddos are at home. One of them was crying because he’ll miss his Valentine class party. Poor guy. But we have power and water, so I’m happy. And it is kind of nice having the kids home. I made that Goolash (not sure if I’m spelling it right) dish for lunch, a couple of kids joined me in eating it.

    Could you just put foil on a pan, spray it with Pam, and then cook bacon that way in the oven? I’m not a big fan of bacon, but putting it in the oven would be a lot easier than messing with the stove or microwave.

    • Thanks Ruth. I ordered the pan from Pampered Chef. They have good quality products, but I only have bought a couple of their items like a great potato peeler. This is a pan which has about 1 inch edges where the grease can collect but not go all over the oven. I also could bake brownies in it although I have used my other pans. However, in this one, the brownies would be smaller and perhaps make them better. I never thought about baking bacon. I used to fry it,and we have used the microwave but never that way. I suppose you could use a 9 x 14 aluminum pan, but the grease could taint the bottom. We will see how this new pan works. However, the pan was to arrive Monday and still is not here, but my order of 50 books of When Hearts Rekindle came today so that’s good. Glad you had a good day and hope you liked the goulash.
